Ingredients

  • 4 bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup feta cheese, crumbled
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse quinoa under cold water.
  3. Cook quinoa in vegetable broth according to package instructions.
  4. While quinoa cooks, slice the tops off the bell peppers and remove seeds.
  5. In a bowl, combine cooked quinoa, diced tomatoes, feta cheese, olive oil, garlic powder, onion powder, salt, and pepper.
  6. Stuff each bell pepper with the quinoa mixture.
  7. Place stuffed peppers upright in a baking dish.
  8. Bake for 25-30 minutes until peppers are tender.
  9. Garnish with fresh parsley before serving.
