- 4 bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup feta cheese, crumbled
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse quinoa under cold water.
- Cook quinoa in vegetable broth according to package instructions.
- While quinoa cooks, slice the tops off the bell peppers and remove seeds.
- In a bowl, combine cooked quinoa, diced tomatoes, feta cheese, olive oil, garlic powder, onion powder, salt, and pepper.
- Stuff each bell pepper with the quinoa mixture.
- Place stuffed peppers upright in a baking dish.
- Bake for 25-30 minutes until peppers are tender.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add other vegetables to the quinoa mixture.
- These can be made ahead and reheated.
- Use different colored bell peppers for variety.
