Description
A traditional Yemeni dish made with spiced rice and tender chicken, perfect for Ramadan celebrations.
Ingredients

- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 4 cups water
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 4 tablespoons oil
- 1 tablespoon Mandi spice mix
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and garlic, sauté until golden.
- Add chicken pieces and brown on all sides.
- Stir in tomatoes and Mandi spice mix.
- Add water and bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Remove chicken and set aside.
- Add rice to the pot, stir, and bring to a boil.
- Reduce heat, cover, and cook for 20 minutes.
- Place chicken on top of rice, cover, and let it steam for 10 minutes.
Notes
- Use high-quality basmati rice for best results.
- Adjust spices according to your taste.
- Garnish with cilantro before serving.
