Description

A traditional Yemeni dish made with spiced rice and tender chicken, perfect for Ramadan celebrations.


Ingredients

Scale
  • 2 cups basmati rice
  • 1 whole chicken, cut into pieces
  • 4 cups water
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 4 tablespoons oil
  • 1 tablespoon Mandi spice mix
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until golden.
  3. Add chicken pieces and brown on all sides.
  4. Stir in tomatoes and Mandi spice mix.
  5. Add water and bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Remove chicken and set aside.
  8. Add rice to the pot, stir, and bring to a boil.
  9. Reduce heat, cover, and cook for 20 minutes.
  10. Place chicken on top of rice, cover, and let it steam for 10 minutes.

  • Use high-quality basmati rice for best results.
  • Adjust spices according to your taste.
  • Garnish with cilantro before serving.
