Delicious raspberry chocolate lava cupcakes with a gooey center.
Ingredients

- 1 cup dark chocolate, chopped
- 1/2 cup unsalted butter
- 1 cup powdered sugar
- 2 large eggs
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup fresh raspberries
- Butter for greasing ramekins
Instructions
- Preheat your oven to 425°F (220°C).
- Grease ramekins with butter.
- Melt chocolate and butter in a bowl over simmering water.
- Stir in powdered sugar until smooth.
- Add eggs, egg yolks, and vanilla. Mix well.
- Fold in flour until just combined.
- Divide batter into ramekins. Add raspberries on top.
- Bake for 12-14 minutes until edges are firm but center is soft.
- Let cool for 1 minute, then invert onto plates.
Notes
- Serve warm for the best lava effect.
- Pair with vanilla ice cream.
