- 1 lemon, quartered
- 4 cloves garlic, crushed

Instructions
- Preheat your oven to 450°F (230°C).
- Pat the chicken dry with paper towels.
- Rub olive oil, salt, and pepper all over the chicken.
- Stuff the cavity with lemon, garlic, and herbs.
- Place the chicken in a roasting pan.
- Roast for 60 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.
