Description

- 1 cup carrots
- 1 cup celery
- 1/2 cup onion
- 2 cloves garlic
- 4 cups chicken broth
- 2 cups shredded chicken
- 16 ounces potato gnocchi
- 2 cups spinach
- 1 cup cream
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Heat oil in your pot.
- Add your carrots, celery, and onion.
- Cook until your vegetables soften.
- Add your garlic and cook for one minute.
- Pour in your broth and thyme.
- Bring your liquid to a boil.
- Add your gnocchi and cook until they float.
- Add your chicken and spinach.
- Pour in your cream and stir.
- Simmer your soup for five minutes.
- Season your soup with salt and pepper.
Notes
- Use your pre-cooked chicken for speed.
- Replace your spinach with kale if you prefer.
