Ingredients

- 2 cups basmati rice
- 1/2 teaspoon saffron threads
- 4 cups chicken broth
- 1 pound chicken breast, sliced into strips
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Soak saffron threads in 2 tablespoons of warm water.
- Rinse basmati rice under cold water until the water runs clear.
- In a pot, bring chicken broth to a boil and add the soaked saffron.
- Add rinsed rice to the pot and cook until rice is tender.
- Meanwhile, heat olive oil in a grill pan over medium heat.
- Season chicken strips with salt, pepper, and lemon juice.
- Grill chicken strips for about 6-8 minutes, turning occasionally.
- Fluff the saffron rice with a fork and serve with grilled chicken on top.
- Garnish with fresh parsley.
Notes
- Use fresh saffron for the best flavor.
- Adjust seasoning to taste.
