Description

Ingredients

  • 2 cups basmati rice
  • 1/2 teaspoon saffron threads
  • 4 cups chicken broth
  • 1 pound chicken breast, sliced into strips
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Soak saffron threads in 2 tablespoons of warm water.
  2. Rinse basmati rice under cold water until the water runs clear.
  3. In a pot, bring chicken broth to a boil and add the soaked saffron.
  4. Add rinsed rice to the pot and cook until rice is tender.
  5. Meanwhile, heat olive oil in a grill pan over medium heat.
  6. Season chicken strips with salt, pepper, and lemon juice.
  7. Grill chicken strips for about 6-8 minutes, turning occasionally.
  8. Fluff the saffron rice with a fork and serve with grilled chicken on top.
  9. Garnish with fresh parsley.
