Description
Delicious shortbread cookies filled with jam.
Ingredients

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup fruit jam (raspberry or apricot)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and powdered sugar.
- Add vanilla extract and mix well.
- Gradually add flour and salt to the mixture, stirring until combined.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Cut out shapes with cookie cutters.
- Cut out the center of half the cookies to create a window for the jam.
- Place cookies on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until lightly golden.
- Let the cookies cool before spreading jam on the solid cookies and topping with the cut-out cookies.
Notes
- Store cookies in an airtight container.
- Use any flavor of jam you prefer.
- Dust with powdered sugar before serving.
