Description

Delicious shortbread cookies filled with jam.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup fruit jam (raspberry or apricot)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar.
  3. Add vanilla extract and mix well.
  4. Gradually add flour and salt to the mixture, stirring until combined.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Cut out shapes with cookie cutters.
  7. Cut out the center of half the cookies to create a window for the jam.
  8. Place cookies on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes until lightly golden.
  10. Let the cookies cool before spreading jam on the solid cookies and topping with the cut-out cookies.
