Description
A refreshing smashed cucumber salad topped with spicy chili crunch.
Ingredients

- 4 cucumbers
- 2 tablespoons salt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon chili oil
- 2 tablespoons chili crunch
- 1 tablespoon sesame seeds
- 2 green onions, chopped
Instructions
- Wash and cut the cucumbers in half.
- Sprinkle salt over cucumbers and let sit for 15 minutes.
- Smash cucumbers with a rolling pin or your hands.
- Mix rice vinegar, soy sauce, sesame oil, and chili oil in a bowl.
- Add smashed cucumbers to the bowl and toss to coat.
- Top with chili crunch, sesame seeds, and chopped green onions.
- Serve immediately or chill for 30 minutes.
Notes
- Adjust the amount of chili oil to your spice preference.
- Serve as a side dish or light meal.
