Ingredients

- 2 pounds purple sweet potatoes
- 2 tablespoons olive oil
- Salt to taste
- 1/4 cup hot honey
Instructions
- Boil the purple sweet potatoes until tender.
- Drain and let them cool slightly.
- Slightly smash each potato with a fork.
- Drizzle with olive oil and sprinkle with salt.
- Transfer to a baking sheet and roast at 400°F for 20 minutes.
- Remove from oven and drizzle with hot honey before serving.
