Description
Soto Ayam is a traditional Indonesian turmeric chicken soup. It features aromatic spices and herbs, creating a flavorful and comforting dish.
Ingredients

- 1 whole chicken (about 3–4 lbs)
- 2 tablespoons vegetable oil
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 6 cups water
- 1 tablespoon salt
- 1 teaspoon ground turmeric
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 inches ginger, sliced
- 2 tablespoons fish sauce
- 2 cups bean sprouts
- 2 hard-boiled eggs, halved
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a pot, heat the vegetable oil over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until fragrant.
- Add the chicken, lemongrass, lime leaves, turmeric, and water.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked.
- Remove the chicken and let it cool. Shred the meat and discard the bones.
- Stir in the fish sauce and salt to taste.
- Serve the soup in bowls, topped with shredded chicken, bean sprouts, and hard-boiled eggs.
- Garnish with cilantro and serve with lime wedges.
Notes
- You can adjust the spice level by adding chili peppers.
- Serve with rice or rice cakes for a complete meal.
- Store leftovers in the refrigerator for up to 3 days.
