Description

Soto Ayam is a traditional Indonesian turmeric chicken soup. It features aromatic spices and herbs, creating a flavorful and comforting dish.


Ingredients

  • 1 whole chicken (about 34 lbs)
  • 2 tablespoons vegetable oil
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 6 cups water
  • 1 tablespoon salt
  • 1 teaspoon ground turmeric
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, sliced
  • 2 tablespoons fish sauce
  • 2 cups bean sprouts
  • 2 hard-boiled eggs, halved
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
  3. Add the chicken, lemongrass, lime leaves, turmeric, and water.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked.
  5. Remove the chicken and let it cool. Shred the meat and discard the bones.
  6. Stir in the fish sauce and salt to taste.
  7. Serve the soup in bowls, topped with shredded chicken, bean sprouts, and hard-boiled eggs.
  8. Garnish with cilantro and serve with lime wedges.

Notes

  • You can adjust the spice level by adding chili peppers.
  • Serve with rice or rice cakes for a complete meal.
