Description
Soup Joumou is a traditional Haitian squash soup enjoyed on New Year’s Day. It symbolizes freedom and is a cherished dish in Haitian culture.
Ingredients

- 1 medium-sized butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 4 cups beef or vegetable broth
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- ½ pound beef, cut into cubes (optional)
- 1 lime, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until softened.
- Add beef cubes (if using) and cook until browned.
- Add butternut squash, broth, thyme, and parsley. Bring to a boil.
- Reduce heat and simmer until squash is tender, about 30 minutes.
- Blend the soup until smooth. Return to pot and heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with lime.
