A hearty and flavorful spiced chickpea and spinach stew.
Ingredients

- 2 cups canned chickpeas, drained
- 4 cups fresh spinach
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1 can diced tomatoes (14 oz)
- 2 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and spices; cook for 1 minute.
- Add diced tomatoes and vegetable broth; bring to a boil.
- Stir in chickpeas and simmer for 10 minutes.
- Add fresh spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve warm.

- Use fresh or canned chickpeas.
- Adjust spices to your preference.
- Serve with rice or bread if desired.
