Description

A hearty and flavorful spiced chickpea and spinach stew.


Ingredients

  • 2 cups canned chickpeas, drained
  • 4 cups fresh spinach
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 can diced tomatoes (14 oz)
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and spices; cook for 1 minute.
  4. Add diced tomatoes and vegetable broth; bring to a boil.
  5. Stir in chickpeas and simmer for 10 minutes.
  6. Add fresh spinach and cook until wilted.
  7. Season with salt and pepper to taste.
  8. Serve warm.
