Ingredients

  • 1 cup lentils
  • 2 cups spinach, chopped
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 tablespoons oil
  • Salt to taste
  • Water as needed

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, heat oil and add cumin seeds.
  3. Add diced onion and sauté until golden.
  4. Stir in garlic, ginger, and chopped tomatoes. Cook for 5 minutes.
  5. Add lentils, turmeric, and water. Bring to a boil.
  6. Reduce heat and simmer until lentils are tender.
  7. Add chopped spinach and cook until wilted.
  8. Add salt to taste and mix well.
