A nutritious and hearty dish made with spinach and lentils.
Ingredients

- 1 cup lentils
- 2 cups spinach, chopped
- 1 onion, diced
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 2 tablespoons oil
- Salt to taste
- Water as needed
Instructions
- Rinse the lentils under cold water.
- In a pot, heat oil and add cumin seeds.
- Add diced onion and sauté until golden.
- Stir in garlic, ginger, and chopped tomatoes. Cook for 5 minutes.
- Add lentils, turmeric, and water. Bring to a boil.
- Reduce heat and simmer until lentils are tender.
- Add chopped spinach and cook until wilted.
- Add salt to taste and mix well.
Notes
- Serve with rice or flatbread.
- Adjust spices according to your preference.
