- 2 pounds fresh mussels, cleaned
- 1 cup coconut milk
- 2 stalks lemongrass, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- Fresh cilantro for garnish
Instructions
- In a large pot, combine coconut milk, lemongrass, garlic, ginger, lime juice, and fish sauce.
- Bring the mixture to a simmer over medium heat.
- Add the cleaned mussels to the pot.
- Cover the pot and steam the mussels for about 5-7 minutes, or until they open.
- Discard any mussels that do not open.
- Serve hot, garnished with fresh cilantro.

- Ensure mussels are fresh and alive before cooking.
- Adjust the amount of fish sauce for desired saltiness.
- Serve with crusty bread to soak up the broth.
