Description

A flavorful Moroccan dish combining sweet and savory elements with tender beef.


Ingredients

Scale
  • 2 lbs beef chuck, cut into chunks
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1 cup dried apricots, chopped
  • 1/2 cup almonds, toasted
  • 2 tbsp honey
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onions and garlic; sauté until soft.
  5. Add spices and cook for 1 minute.
  6. Stir in tomatoes and beef broth.
  7. Add beef back to the pot.
  8. Bring to a boil, then reduce heat and simmer.
  9. Add dried apricots and honey after 1 hour.
  10. Continue to simmer for another hour or until beef is tender.
  11. Serve with toasted almonds and garnish with cilantro.

Notes

  • Serve with couscous or rice.
  • You can adjust sweetness by adding more or less honey.
  • Leftovers taste even better the next day.
