A flavorful Moroccan dish combining sweet and savory elements with tender beef.
Ingredients
Scale
- 2 lbs beef chuck, cut into chunks
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 1 cup dried apricots, chopped
- 1/2 cup almonds, toasted
- 2 tbsp honey
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onions and garlic; sauté until soft.
- Add spices and cook for 1 minute.
- Stir in tomatoes and beef broth.
- Add beef back to the pot.
- Bring to a boil, then reduce heat and simmer.
- Add dried apricots and honey after 1 hour.
- Continue to simmer for another hour or until beef is tender.
- Serve with toasted almonds and garnish with cilantro.
Notes
- Serve with couscous or rice.
- You can adjust sweetness by adding more or less honey.
- Leftovers taste even better the next day.
