Ingredients

- 2 medium sweet potatoes, diced
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Place diced sweet potatoes on a baking sheet.
- Drizzle with olive oil, season with salt and pepper, and toss.
- Bake for 25-30 minutes until tender.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add ground beef, cook until browned.
- Stir in cumin and paprika, cook for another 2 minutes.
- Assemble the bowl: add sweet potatoes and beef, garnish with parsley.
Notes
- Can substitute ground turkey for beef.
- Add avocado for extra creaminess.
- Store leftovers in the fridge for up to 3 days.
