Tom Kha Gai is a Thai coconut soup with chicken and galangal.
Ingredients

- 2 cups coconut milk
- 1 cup chicken broth
- 1 pound chicken breast, sliced
- 1 stalk lemongrass, cut into pieces
- 3–4 slices galangal
- 3–4 kaffir lime leaves
- 200 grams mushrooms, sliced
- 2–3 Thai bird’s eye chilies, smashed
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Cilantro for garnish
Instructions
- Combine coconut milk and chicken broth in a pot.
- Add lemongrass, galangal, and kaffir lime leaves.
- Bring to a boil, then reduce heat to simmer.
- Add sliced chicken and mushrooms.
- Cook until the chicken is fully cooked.
- Add fish sauce and lime juice.
- Remove from heat and garnish with cilantro.
Notes
- Adjust spice level with more or fewer chilies.
- Serve hot with rice.
- Use fresh ingredients for the best flavor.
