Description

Tom Kha Gai is a Thai coconut soup with chicken and galangal.


Ingredients

  • 2 cups coconut milk
  • 1 cup chicken broth
  • 1 pound chicken breast, sliced
  • 1 stalk lemongrass, cut into pieces
  • 34 slices galangal
  • 34 kaffir lime leaves
  • 200 grams mushrooms, sliced
  • 23 Thai bird’s eye chilies, smashed
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Cilantro for garnish

Instructions

  1. Combine coconut milk and chicken broth in a pot.
  2. Add lemongrass, galangal, and kaffir lime leaves.
  3. Bring to a boil, then reduce heat to simmer.
  4. Add sliced chicken and mushrooms.
  5. Cook until the chicken is fully cooked.
  6. Add fish sauce and lime juice.
  7. Remove from heat and garnish with cilantro.

  • Adjust spice level with more or fewer chilies.
