Description

Trini Doubles are a popular street food from Trinidad. They consist of curried chickpeas served in soft, fried bara bread.


Ingredients

  • 1 cup chickpeas
  • 1 tablespoon curry powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 2 tablespoons oil
  • Salt to taste
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon turmeric
  • Water as needed

Instructions

  1. Soak the chickpeas overnight and cook until tender.
  2. In a pan, heat oil and sauté onions and garlic until soft.
  3. Add curry powder, cumin, and cooked chickpeas. Stir well and cook for a few minutes.
  4. In a bowl, mix flour, baking powder, turmeric, and salt. Gradually add water to form a dough.
  5. Divide the dough and roll into small balls. Flatten each ball into a disc.
  6. Fry the discs in hot oil until golden brown.
  7. Serve the curried chickpeas in the bara bread.
