Description
Trini Doubles are a popular street food from Trinidad. They consist of curried chickpeas served in soft, fried bara bread.
Ingredients

- 1 cup chickpeas
- 1 tablespoon curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 2 tablespoons oil
- Salt to taste
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon turmeric
- Water as needed
Instructions
- Soak the chickpeas overnight and cook until tender.
- In a pan, heat oil and sauté onions and garlic until soft.
- Add curry powder, cumin, and cooked chickpeas. Stir well and cook for a few minutes.
- In a bowl, mix flour, baking powder, turmeric, and salt. Gradually add water to form a dough.
- Divide the dough and roll into small balls. Flatten each ball into a disc.
- Fry the discs in hot oil until golden brown.
- Serve the curried chickpeas in the bara bread.
Notes
- Adjust spices according to your taste.
- Serve with pepper sauce for extra heat.
- Best enjoyed fresh and warm.
