Description
Ube Halaya is a sweet, creamy jam made from purple yam. It’s a popular Filipino dessert spread.
Ingredients

- 2 cups ube (purple yam), cooked and mashed
- 1 can (400ml) coconut milk
- 1 can (300ml) evaporated milk
- 1 cup sugar
- 1/2 cup butter
- 1 teaspoon vanilla extract
Instructions
- In a large pan, combine mashed ube, coconut milk, and evaporated milk.
- Cook over medium heat, stirring continuously.
- Add sugar and butter, mixing well.
- Continue to cook until the mixture thickens.
- Stir in vanilla extract.
- Transfer to a mold and let it cool.
- Refrigerate for a few hours before serving.

- Adjust sweetness to your taste.
- Store in an airtight container in the fridge.
- Can be used as a filling for pastries or as a topping for desserts.
