Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can coconut milk
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 cup chickpeas, drained
- 1 bell pepper, diced
- 1 cup spinach
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add bell pepper and sauté for 5 minutes.
- Add chickpeas, coconut milk, curry powder, and turmeric. Stir well.
- Simmer for 10 minutes. Add spinach and cook until wilted.
- Serve the curry over quinoa. Season with salt and pepper.
