Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 cup chickpeas, drained
  • 1 bell pepper, diced
  • 1 cup spinach
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. In a skillet, heat olive oil over medium heat.
  4. Add bell pepper and sauté for 5 minutes.
  5. Add chickpeas, coconut milk, curry powder, and turmeric. Stir well.
  6. Simmer for 10 minutes. Add spinach and cook until wilted.
  7. Serve the curry over quinoa. Season with salt and pepper.
