Description

A rich and hearty West African Peanut Soup made with ground peanuts and vegetables.


Ingredients

  • 1 cup ground peanuts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 2 cups sweet potatoes, diced
  • 1 bell pepper, chopped
  • 1 teaspoon cayenne pepper
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté onions, garlic, and ginger until soft.
  2. Add the diced tomatoes and cook for a few minutes.
  3. Stir in the ground peanuts and cayenne pepper.
  4. Add vegetable broth and bring to a boil.
  5. Add sweet potatoes and bell pepper.
  6. Reduce heat and simmer for about 20 minutes until vegetables are tender.
  7. Season with salt.
  8. Serve hot, garnished with fresh cilantro.
