Description
A rich and hearty West African Peanut Soup made with ground peanuts and vegetables.
Ingredients

- 1 cup ground peanuts
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 can diced tomatoes
- 4 cups vegetable broth
- 2 cups sweet potatoes, diced
- 1 bell pepper, chopped
- 1 teaspoon cayenne pepper
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté onions, garlic, and ginger until soft.
- Add the diced tomatoes and cook for a few minutes.
- Stir in the ground peanuts and cayenne pepper.
- Add vegetable broth and bring to a boil.
- Add sweet potatoes and bell pepper.
- Reduce heat and simmer for about 20 minutes until vegetables are tender.
- Season with salt.
- Serve hot, garnished with fresh cilantro.
Notes
- This soup can be made ahead and stored in the fridge.
- Adjust the spice level to your preference.
- Serve with rice or bread for a complete meal.
