Description

A rich and flavorful spread made from whipped beef tallow and confit garlic, served with warm sourdough bread.


Ingredients

  • 1 cup beef tallow
  • 1 head of garlic
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Sourdough bread, for serving

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Slice the top off the head of garlic and drizzle with olive oil.
  3. Wrap the garlic in aluminum foil and roast for 45-60 minutes until soft.
  4. Allow the garlic to cool, then squeeze the cloves out of their skins.
  5. In a mixing bowl, combine the beef tallow and roasted garlic.
  6. Whip the mixture until light and fluffy.
  7. Season with salt and pepper to taste.
  8. Serve with warm sourdough bread.
