Description
A rich and flavorful spread made from whipped beef tallow and confit garlic, served with warm sourdough bread.
Ingredients

- 1 cup beef tallow
- 1 head of garlic
- 2 tablespoons olive oil
- Salt to taste
- Freshly ground black pepper to taste
- Sourdough bread, for serving
Instructions
- Preheat your oven to 300°F (150°C).
- Slice the top off the head of garlic and drizzle with olive oil.
- Wrap the garlic in aluminum foil and roast for 45-60 minutes until soft.
- Allow the garlic to cool, then squeeze the cloves out of their skins.
- In a mixing bowl, combine the beef tallow and roasted garlic.
- Whip the mixture until light and fluffy.
- Season with salt and pepper to taste.
- Serve with warm sourdough bread.
Notes
- Store leftovers in the refrigerator for up to one week.
- Use high-quality beef tallow for best results.
- Experiment with different herbs for added flavor.
