Ingredients

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup white chocolate, melted
  • 1 cup fresh raspberries
  • 1 cup brewed coffee, cooled
  • 24 ladyfinger cookies
  • 1/4 cup raspberry puree
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, whisk mascarpone cheese, heavy cream, and powdered sugar until smooth.
  2. Fold in melted white chocolate and vanilla extract.
  3. Dip ladyfingers in cooled coffee briefly.
  4. Layer half of the dipped ladyfingers in a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Add half of the raspberries and drizzle with raspberry puree.
  7. Repeat the layers with remaining ingredients.
  8. Refrigerate for at least 4 hours before serving.
