- 1 whole cauliflower
- 2 tablespoons olive oil
- Salt to taste
- 1/4 cup tahini
- 1/4 cup water
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Remove the leaves from the cauliflower and trim the stem.
- Place the cauliflower on a baking sheet and brush with olive oil.
- Sprinkle salt over the cauliflower.
- Roast for 40-50 minutes until golden brown and tender.
- In a bowl, mix tahini, water, lemon juice, garlic, and parsley until smooth.
- Serve the roasted cauliflower drizzled with the green tahini sauce.
