Description

Yukgaejang is a spicy Korean soup made with beef and scallions.


Ingredients

Scale
  • 1 lb beef brisket
  • 8 cups water
  • 1 cup scallions, chopped
  • 1/4 cup gochugaru (Korean red pepper flakes)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt to taste

Instructions

  1. In a pot, combine beef brisket and water. Bring to a boil.
  2. Reduce heat and simmer for 1 hour until beef is tender.
  3. Remove beef, shred it, and set aside.
  4. Add scallions, gochugaru, soy sauce, sesame oil, garlic, and ginger to the broth.
  5. Simmer for 10 minutes.
  6. Add shredded beef back to the pot and simmer for another 5 minutes.
  7. Season with salt to taste.

Notes

  • Adjust spice level by adding more gochugaru.
  • Serve with rice for a complete meal.
