Ingredients

- 2 cups of chopped bell peppers
- 2 cups of chopped zucchini
- 2 cups of chopped eggplant
- 1 cup of cherry tomatoes
- 3 tablespoons of olive oil
- 2 tablespoons of zaatar seasoning
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine all chopped vegetables.
- Add olive oil, zaatar, and salt. Toss to coat evenly.
- Spread the vegetable mixture on a baking sheet.
- Roast in the oven for 25-30 minutes until tender.
- Serve warm as a side dish or main course.

- Can be served with rice or pita bread.
